It reminds me of a pineapple bread pudding that takes minutes to prepare—this sweet holiday side dish pairs perfectly with CrockPot ham.

I may make it with leftover ham to see how it tastes baked together.

This stuffing is one part side dish and one part dessert. You can serve it with the main meal, or towards the end, it is up to you.

Ingredients

  • Softened Butter
  • Large Eggs
  • Sugar
  • Crushed Pineapple
  • White Bread Slices

Bread - We use plain white sandwich bread but you could easily use brioche bread, Hawaiian bread, or any soft bread.

Butter - You can use vegan butter to make this vegan.

Sugar - You can cut the sugar in half if you don't want as sweet of a pineapple stuffing. You can also use a 50/50 mix of white and brown sugar if you want a more caramel flavor.

Crushed Pineapple - You can add this drained or undrained depending on the texture you want for the stuffing. We normally drain pineapple juice from the crushed pineapple. Chunk pineapple can be used if you want more texture.

RecipeVariations- you can add in toasted sliced almonds on the top if you want a bit of a crunch in your stuffing. A bit of vanilla extract for sweetness.

For additional texture - you can add in ⅓ cup chopped pecans/walnuts. Stir in dried cranberries.

Step 3 - Add in bread cubes that are cut in 1 inch squares. Stir together until the bread crumbs are well coated.
